Sauvignon Blanc is a Livermore Heritage varietal, first planted in the 1800s from cuttings obtained from the famous first growth Chateau d’Yquem. For over 130 years, Livermore Valley has been recognized as one of the finest terroirs for Sauvignon Blanc.
The 2011 Occasio Sauvignon Blanc is sourced entirely from Livermore’s Del Arroyo Vineyard, the highest vineyard location in Livermore Valley. A combination of altitude and an east-west orientation of the valley allows Del Arroyo to escape the impenetrable fogs that sometimes plague other growing areas. Monitored on a daily basis from August 29 through harvest on September 23, we picked our grapes at a ripeness achieved only in the greatest vintages.
Hand sorted at the winery, the grapes were pressed as whole clusters and cold settled in a holding tank for 48 hours. Then, the juice was racked to our specially designed oval fermenting tanks. Fermentation temperatures were kept cold in order to retain the prized aromas characteristic of the best Sauvignon Blancs. The wine was cold stabilized and bottled on January 16, 2012.
